A warm muffin!
Breakfast is most definitely my favorite meal of the day.
Its the perfect chance to start your day off right.
This one is a favorite at our house.
Bran Muffins.
1 c All Bran ceral
2 c boiling water
2 eggs
2 c buttermilk
1 c honey
1/2 c canola oil (or applesauce)
2 -2 1/2 c whole wheat flour
1/4 c almond meal*
2 1/2 tsp baking soda
1/2 tsp kosher salt
1 1/2 c raisins (or other dried fruit, optional)
2 c Bran Buds
Combine 1 c All Bran and boiling water in small bowl, let stand until softened.
In a large bowl mix eggs, buttermilk, honey and oil.
Add water/All Bran mixture. Stir to combine.
Stir in flour, almond meal, soda and salt just until combined.
Add raisins.
Batter can be covered and stored in refrigerator up to three weeks.
Bake as needed (1/4 c batter per muffin) -- 375 for 20 minutes.
*if you choose to forgo the almond meal, add more flour, otherwise, stick to two cups flour.

In the morning, just preheat the oven as soon as you walk in the kitchen,
and by the time everyone is ready to eat
and by the time everyone is ready to eat
you feel like a 5-star mom as you serve up some warm muffins!
We like to enjoy a grapefruit while we wait for the muffins to cool.
The perfect combo. Serious.
