Strawberry Banana Pancakes.


Pancakes.... mmm. I like them better than waffles. We've been back from Christmas Vacation for a week now and I JUST went grocery shopping this morning. So its' been slim pickin's around here. You know when you're trying to make those stale Bran Flakes in the back of the pantry taste good..? Enter breakfast for Sunday dinner. Elegant, right? A thawed frozen banana, frozen strawberries turned syrup, and tada! Strawberry Banana Pancakes.
I had you at thawed frozen banana, didn't I?
They were actually very delicious.

Banana Pancakes.

1 ripe banana
1 egg
2 c buttermilk*
4 Tbsp canola oil
2 Tbsp honey
1 c white flour
1 c whole wheat flour
1 1/2 Tbsp baking powder
1 tsp baking soda
1 tsp salt

Mash banana with the back of a fork. Beat in egg, oil, honey and milk.
Sift dry ingredients together, then add to wet banana mixture.
Stir just until combined. Scoop 1/4 cup of batter at a time and
Cook on a 350 frying pan.

*If you don't have buttermilk, measure equal amount of milk and add 1 Tbsp white vinegar per cup of milk.


Strawberry Sauce
.

2 c frozen strawberries
1/4 c orange juice, or juice from one orange
2-3 T honey for desired sweetness

Combine all ingredients in saucepan and cook until thawed and boiling.
Smash strawberries and cook 5ish minutes longer until thickened.
Taste for consistency and sweetness first.
