3 sweet onions
3 Tbsp olive oil
1 Tbsp flour
1 tsp salt
2 1/2 cups chicken broth
2 cup milk
1 1/2 tsp paprika
Ground black pepper to taste
Saute onions in heated oil until soft, golden and transparent.
Whisk in flour to make a roux.
Continue whisking while adding chicken broth.
Simmer over low heat for 15 minutes.
Reduce heat to low and add milk; be careful not to boil.
Once hot, remove from heat and serve!
Top with grated cheese.
Serve with fresh French bread.
ps. Be prepared for tears, right?
